BAKED VEGETABLE EMPANADAS







INGREDIENTS::


For stuffing::


1tsp olive oil
1/2 tsp finely chopped garlic
1/2 cup finely chopped onion
2 tsp finely chopped mashroom
2 tsp finely chopped boiled carrot
2 tsp finely chopped boiled zucchini
1 tsp finely chopped green capsicum
1 tsp  finely chopped yellow capsicum
1 tsp  finely chopped red capsicum
1 tsp black papper
2 tsp cream style corn
2 tsp tomato puree
2 tsp grated cheese
2 tsp finely chopped coriander
salt to taste
For dough::
1 cup maida
1/4 tsp baking powder
salt to taste
1 tsp oil
water as per needed


METHOD::



  •  Heat oil in pan ,add garlic and onion in it & cook it.


  •  Add mashroom in it.


  •  Add carrot.


  •  Add zucchini.


  •  Add  green & yellow capsicum.


  •  Add red capsicum.


  •  Add black paper & corn style cream.


  •  Add tomato puree,salt & cook all ingredients.


  •  When cooked transferin into one bowl.


  •  Add cheese in stuffing. and mix it &stuffing is ready.


  •  Make a dough and rest for 1 hour and then make small roti.


  •  Put stuffing in middle & give shape whatever u like.(u must have to apply water at corner of   puri so it will stick nicely)


  •  Make a design by fork.


  •  Take baking dish greece it and then apply flour on it& spread.


  •  Put all ampanadaz on dish.


  •  Bake it on preheated oven on 180 degree for 15-20 minutes.



  • Now delicious veg Empanadas is ready to serve with tomato kertchup.
