INGREDIENTS::
For Nest::
1 cup boiled salted noodles
oil to fry
For Exotic vegetable::
1 tsp seaseme oil
1 long sliced zucchini
2 piece tofu
3-4 baby corn
1/2 carrot long sliced
1 tsp broccoli
1 tsp red cabbage
1 tsp green bell paper
1 tsp yellow bell paper
1 tsp red bell paper
1 button mushroom
1 tsp garlic paste
2-3 basil leaves
water as per need
For sauce::
1/2 cup tin orange juice
1/2 tsp soya sauce
1/2 tsp aji no moto
1 tsp corn flour
Garnish::
cheery tomato
roasted peanuts
white roasted seaseme seeds
basil leaves
METHOD::
- Spread the noodles on a kitchen towel and dab lightly to absorb all the moisture. Sprinkle cornflour and salt on the noodles and mix lightly.
- Place the half noodles in a strainer to make a basket, along the mesh of the strainer. hold the noodles in the strainer on top and pour the hot oil in the strainer, using a ladle, to fry the basket.
- Keep pouring the oil on all sides until the noodles are golden brown. Remove carefully from the strainer and place on absorbent kitchen paper.
- Heat the oil in a pan & add zucchini.
- Add tofu,caroot.
- Add red cabbage.
- Add baby corn, broccoli.
- Add yellow, green , red capsicum.
- Saute vegetables. don't over cook.
- Add garlic paste & saute.
- Add water & basil leaves & cook.
- Exotic vegetables are ready.
- For sauce take one cup orange juice .
- Add soya sauce in it mix.
- Add corn flour & aji no moto.
- Mix all ingredients very well & microwave it for 1 minute.
- When it will become semi thick sauce is ready.
- In serving plate arrange lettuce and place noodles nest on it.
- Put vegetables on it & pour sauce on it.
- Arrange cherry tomatoes.
- Sprinkle Peanuts.
- Sprinkle seaseme seeds.
- Garnish with basil leaves.
- Serve hot.
